Cast Iron Wok Cooking Tips


A cast iron wok is thinner than a normal fry pan. It allows the heat to be transferred and distributed faster. This is the uniqueness of a cast iron wok in that it can quickly heat up and cook your food at higher temperatures. It may be easier to purchase a cast iron wok with a longer handle. Traditional cast iron works have 2 handles but require you to have skill and technique before being able to use it.


The important thing with cast iron woks is that you need to maintain and clean it well to prevent rusting. After cleaning it, apply a little oil and wipe with a tissue to spread the oils along the wok's surface to prevent it from rusting.*Eggs and other easy to cook vegetables should be cooked last.For people who are right handed it will be your left hand which tosses the wok while the right hand uses the wok stirrer.The benefits of cast iron woks are that it adds a smoky flavour to your dish when cooked at the right temperature. And it all mushroomed.'But between the opening of the first Golden Wok and the sale of Quik Wok to Burger King in late June, there were a lot of headaches and a lot of hard work, including 16-to 18-hour workdays."I feel like I lost one of my children,' she added, "But I know it's best for the concept.'When the Florida store proved as successful as the San Antonio units (average $440,000 in sales), Andrews set out to, in her words, "McDonaldize' the Chinese food business.After Golden Wok was up and running, Andrews was faced with a major problem: Where in San Antonio could she find a competent chef to relieve her of some of her cooking duties?The new project will be located in the ground floor and basement of a six-story apartment building on Great Jones Street in this city's Bowery district. Even the SBA was impressed. Admitting it had made a mistake, the agency approved her initial $10,000 loan. And Connie Andrews, then 33 years old, was well on her way to becoming a very rich woman.You can be sure she will not be using that expression anymore.Andrews, now 46, will remain with Quik Wok as a consultant but will devote most of her time to the two Golden Wok restaurants, which she still owns. Called the Acme Bar & Grill, it wll open early next year and will have live entertainment.Pillsbury has jumped into the growing Chinese fast-food segment with the purchase of nine-unit equik Wok, a privately held chain based in San Antonio. Terms were not disclosed."We have very tight controls here, and I think Burger King was quite impressed,' Andrews said. "Jeff Campbell [chairman of Burger King] and Jerry Levin of Pillsbury told us that for our size, this was one of the most professionally run and professionally organized companies they had seen.'"People in New York like hearing about places,' Tankursley concluded. "They like to think that they have discovered a place. People in Manhattan will go out of their way to look for a place. We didn't even list our phone number until after The New York Times wrote about us.'Opening Tupelo Honey took only a $40,000 initial investment, Tankursley said, which went toward painting, installing a stereo and tape system and buying some kitchen equipment. Sales were strong until the summer, he recalled, when business fell off by as much as two-thirds. They have come back somewhat, he added, but not to the projected weekly sales mark of $2,000. The 55-seat restaurant stands 900 sq. ft. Liquor accounts for about a third of sales, Tankursley added."It's still really hard for me to believe,' Andrews said. "I guess it still hasn't sunk in yet. But I'm starting to realize it's not mine anymore, especially when I see five or six people from Burger King walking around here.Quik Wok operates eight units in San Antonio and one in Fort Lauderdale, Fla. In addition to Burger King, Pillsbury owns S & A Restaurant Corp.--which operates Bennigan's, Steak & Ale, and J. J. Muggs--and Haagen-Dazs Shoppes.Because in March of this year, officials of Miami-based Burger King--perhaps impressed by the Quik Wok 30 miles north in Fort Lauderdale --contacted Andrews and expressed an interest in her chain. After executives made several visits, the 4,000-unit burger giant appeared ready to buy her nine-unit chain."I'm pretty good at seeing a space and imagining what could be done with it,' Tankursley said. "It's pretty easy if you have the right group of people working with you. I like to be here long enough to get a place profitable before I go on to the next one till it goes belly-up,' he joked. "A lot of restaurant owners do the same conncept over and over. I like to have a kind of different feeling to them.'The menu includes a variety of international influences, including several vegetarian dishes. More traditional items, priced from $4 to $11, include vegetable tempura, sweet and sour shrimp and beef with snow peas in black bean sauce. Other dishes, all prepared without MSG, include Italian wok stir-fry sweet and sour catfish, California rolls and a variety of chow fun noodles with toppings. After midnight Dim Sum and hamburgers are available as specials. Chinese, Japanese, French and American beers are also available, as is delivery until 2 a.m. An average per-person check, with drinks, is about $10."We've been looking for the right opportunity to diversify within the fast-food industry,' said J. Jeffrey Campbell, Burger King chairman and chief executive. "Quik Wok provides us with an exciting entry into the ethnic-food business--a business we feel has substantial consumer appeal and growth potential.'"I had never cooked Chinese food on a Chinese stove until the first customer put in the first order,' said Andrews, whose culinary career began with egg rolls cooked at home while she was working as a $1.80-an-hour cashier at Lackland Air Force Base. "But I said to myself, "If the Chinese can do it, you can do it.' Ignorance was bliss.The chain evolved from Golden Wok, a three-unit fullservice Chinese dinnerhouse operation started by Andrews 13 years ago in San Antonio. Eight years later she and Lau, then her employee, opened the first Golden Wok fast-food offshoot. Lau, who was raised in China and trained in Hong Kong, began as a chef and brought to Quik Wok a firsthand knowledge of Chinese cuisine."I liked the area,' Andrews said of Fort Lauderdale, "and I wanted to see how it would do standing on its own merit. This was going to run without being directly under our own wing.'The restaurant includes a 300-sq.-ft. kitchen featuring a broiler oven, one refrigerator for fish and another for meats and vegetables, a griddle, a four-burner range, a fryolator and a three-well steam table. The blackboard menu features such appetizers as BBQ shrimp, catfish fingers with remoulade sauce, fried chicken livers and jambalaya for $4.95 each. Fixed price entrees are $10.25 and range from blackened or grilled trout to steak rancheros, catfish with hush puppies, Cajun chicken with peas and chicken fried steak.In December 1975, Andrews moved the restaurant across the street, where she had a seating capacity of 110 and more than 30 employees. A year later increased sales prompted her to open the second Golden Wok on Fredricksburg Road here.Enter Kenneth Lau, a 21-year-old Chinese refugee, who walked into Golden Wok one day in 1974 and applied for a job.

"I had played around frying rice at the house and tried to develop recipes about how to cook in a wok, but a Chinese stove--36 ft. long and stainless steel--is a whole different animal. There are three big gas jets, and the flames practically engulf the wok.'By the end of 1979, the first Golden Wok was doing such a brisk takeout business that Andrews decided to open a fast-food version of the restaurant, called Quik Wok. Within three years she had opened nine Quik Woks, including a unit in Fort Lauderdale, the first outside of San Antonio.The restaurant's kitchen, smaller than that at Tupelo Honey, features two work, a fryer and a six-burner stove as well as various reach-in coolers and freezers. The initial investment, Tankursley said, was only $10,000 but will eventually reach $150,000. Weekly sales have thus far been "pretty much zip. Pretty low. It was the same at Tortilla Flats . . . the first month.' The restaurant, like its neighbor, carries no signage.Bad call by the SBA. With $3,700--including money borrowed from her brother--Andrews opened the full-service Golden Wok restaurant in Latigo Plaza here on Sept. 7, 1972. Within days Texans were coming from miles around to sample her Chinese food.Burger King, Pillsbury's largest restaurant division, will manage the chain. Quik Wok posted sales of $4 million in 1984, with 60% derived from carryout and drive-thru.The venture, slated for next March or April, would be the third within a year for the 34-year-old Dallas native. Last March he and partner Laura Klein opened Tupelo Honey, a laid-back, down-home concept at 13 Barrow St. in Greenwich Village. In August Wok and Roll opened two doors away, at 11 Barrow. The two are the only restaurants in which Tankursely takes any active role in the day-to-day management. Tankursley and Klein currently own 50% of Tupelo Honey and will take full ownership once New York State approves its liquor license Tankursely said. He is a 25% owner in Wok and Roll, along with Klein, Harris and Tim Hill, he added.Connie Andrews, founder of the Quik Wok chain, remembers the day in 1972 when the Small Business Administration turned down her loan application. Southwest Texas, the loan officer said, was no place for a Chinese restaurant.Other recent restaurant projects for Tankursely have included Tortilla Flats, opened in May 1983 (Tankursley owns 24 1/4%, he said); Gulf Coast, which opened in May 1984 (Tankursley owns 12%); and How's Bayou, which made its debut in December 1984 (Tankursley sold his 25% share after one month). In each one, Tankursley contributed to the development of the specific concept.Other key players in the segment include Nankin Express of Eden Prairie, Minn.; Eggroll Express of Tulsa, and Xian of Westmont, Ill., in which former Diversifoods president Donald N. Smith owns a 10% interest.Wok and Roll was designed, Tankursley said, as "a latenight place for a young crowd that stays out till 4 in the morning.' Open 6 p.m. to 4 a.m. during the week (5 p.m. till midnight on Sundays), the restaurant seats 48 in the main dining room and 12 in each of two Japanese-style tatami rooms in the basement. Decor combines Chinese red walls, jade green tables and neon, lacquered fans, mirrored walls, Chinese ornaments and suspended paper lanterns, accented by hi-tech lighting. A black tile bar atop a wall of orange lighted glass cubes is set several steps down from the main dining room. MTV provides rock videos, and there are tapes of rock favorites of the last three decades. "No one ever hangs out in Chinese restaurants,' Tankursley lamented. "Most are pretty bland, no business that will last.'Andrews and Quik Wok: Genesis of a fast feeder"Now I'm one of the success stories of the SBA,' said Andrews, who recently sold her $4 million Quik Wok fast-food chain--an offshoot of Golden Wok--to Pillsbury's Burger King. "They call me up and want me to speak to other women about business opportunities.'

Burger King building multiconcept empire


MIAMI -- With its management resources already spread thin by the recent foray into new markets, Burger King Corp. is forging ahead with its plan to turn a burger chain into a multiconcept fast-food empire.


The strategy call for the energy formerly devoted to a single chain to be divided among bolstering the 4,334-unit Burger King chain, reformulating and expanding the newly acquired Quik Wok system and restructuring the teetering 850-unit Godfather's Pizza.The company is attempting to put its marketing efforts back on track; the first step is its new "Herb" advertising program. The campaign is designed to promote Burger King's overall image.Yet many wonder whether the corporation's management resources are already overtaxed. While the company was expanding its operations in 1985, a series of shake-ups brought the departure of such key executives as Kyle Craig and left Burger King Corp. with some holes in its management structure.In a small bowl, stir together soy, sugar, and sherry; set aside. Heat wok or a 12-inch frying pan over medium-low heat. Add sesame seed and cook, stiring constantly, until lightly browned, 3 to 5 minutes. Scrape out of pan and set aside.Burger King's efforts to rectify the situation brought a new set of problems.The one positive impact of beefing up the Whopper, Burger King's highest-priced menu item, was an increase in sales of the sandwich to current customers.Return pan to high heat and add remaining oil and ginger, garlic, onion, and shrimp; stir-fry until shrimp are opaque in thickest part (cut to test), about 3 minutes. Food Culture in China


To say that the consumption of food is a vital part of the chemical process of life is to state the obvious, but sometimes we fail to realize that food is more than just vital. The only other activity that we engage in that is of comparable importance to our lives and to the life of our species is sex. As Kao Tzu, a Warring States-period philosopher and keen observer of human nature, said, �Appetite for food and sex is nature.�1 But these two activities are quite different. We are, I believe, much closer to our animal base in our sexual endeavors than we are in our eating habits. Too, the range of variations is infinitely wider in food than in sex. In fact, the importance of food in understanding human culture lies precisely in its infinite variability -variability that is not essential for species survival. For survival needs, all men everywhere could eat the same food, to be measured only in calories, fats, carbohydrates, proteins, and vitamins. But no, people of different backgrounds eat very differently. The basic stuffs from which food is prepared; the ways in which it is preserved, cut up, cooked (if at all); the amount and variety at each meal; the tastes that are liked and disliked; the customs of serving food; the utensils; the beliefs about the food�s properties -these all vary. The number of such �food variables� is great.


Although the hosts in China are all friendly and hospitable, you should also show them respect. Before starting to eat dinner, the host may offer some words of greeting. Guests should not start to eat until the host says, �Please enjoy yourself� or something like that, otherwise it suggests disrespect and causes displeasure.* 1 Tbsp. brown sugar(A)Respect First3/4 teaspoon salt* 2 Tbsp. grated orange rindWho should buy a black range cooker?Do not drum or tap bowls and plates with chopsticks especially when you are a guest, because people believe that is the humble behavior of beggars when they beg for food.1 teaspoon vanilla2. Prepare pumpkin or squash by cutting it open and scooping out the seeds with a spoon. Either save the seeds for roasting, or discard. Cut the pumpkin/squash into cubes, slicing off the skin. You will probably only use 1/3 to 1/2 a pumpkin for this recipe (save the rest in the refrigerator for cooking later).Preparation:5. When the curry begins to boil, reduce heat to medium, stirring occasionally. Allow to simmer for 6-8 minutes, or until vegetables have softened.6. Add the bell pepper, cherry tomatoes, chick peas, and orange rind, stirring to incorporate.
