Do you want to learn the best salt and pepper squid with noodle salad recipe from a master chef? Here's how you can use your cast iron wok to create the most fragrant salt and pepper dish. What you need is:


*5 teaspoons sea salt*Small capsicum diced or small mildly hot chilliPurchase fresh squid tubes from the local fish market. If you prefer using the whole squid, then you can buy the whole squid and prepare it from scratch. The whole squid is great because you can use both the tubes and tentacles for the salt and pepper squid which adds more texture to your dish.*200 grams of bean sprout*1.5 tablespoons cornflour (cornstarch)*1.5 tablespoons plain flour*300g (10oz) of squidIn a small bowl, add 4 table spoons of fish sauce, 1 table spoon of lemon juice or vinegar, 1 table spoon of sugar and 4 table spoons of hot water. Stir the mixture and taste.Boil hot water in a pot and add the vermicelli noodles once the water boils. Cook for 3 minutes or until al-Dante then drain and place under a cold tap. Rest the noodles in a sieve to allow the water to drain.You have now a balanced dish with both delicious salt and pepper squid and a noodle salad. Bon App�tit!Mix the noodles with the mint, half the capsicum, bean sprouts, Spanish onions and dried onions and the fish sauce.Add the fish sauce to the noodle salad and serve with the salt and peer squid.*2 slices of dried vermicelli noodles*1 Spanish onion dicedHeat the oil in your cast iron wok. Wait until the oil is about 150 degrees and then add half your squid. You can cook for about 1 minute or until the squid begins to colour. Then remove the squid and place squid on a sieve to allow the oil to drain away.*1 clove garlic dicedIn you cast iron wok, place in 2 table spoons of oil, then add garlic, half the onions and half the capsicum and stir slightly. Then add the squid and toss. Sprinkle with salt and the Sichuan pepper and remove from the cast iron wok. Place it on a large plate.*2 teaspoons crushed Sichuan pepper*2 cups of oil*10 mint leaves diced

You have now a balanced dish with both delicious salt and pepper squid and a noodle salad. Bon App�tit!

Red-braising is the technique where food is braised in a dark liquid such as soy sauce which gives the food a red/brown colour. This type of braising sauce can be frozen and re-used.As well as the wok, you will need a wok stand, particularly if you have an electric hob. This keeps the wok stable if you are using it for braising or deep frying.Once you have everything prepared, heat your wok until it is very hot then add oil and using your chosen stirring implement ensure that the oil is evenly distributed over the surface of the wok. Before you add your ingredients. the wok should be so hot that it is almost smoking - this will prevent the food from being greasy. The exception to this is if you are flavouring your oil with garlic, chilli, spring onions, ginger or salt - these will burn if the oil is too hot.This is the same as the Western technique. Fry food on one side, then the other and drain off any excess oil before adding sauce ingredients. A normal frying pan is fine for this.Make sure that food to be deep fried is dried thoroughly on kitchen paper or drained of its marinade before cooking otherwise it will spit.Stir-FryingIf using a bamboo steamer or plate in a wok, bring about 2 inches of water to a simmer. Put your rack into the wok (if the bamboo steamer is big enough and will sit on the sides of the wok without being in the water, you don�t need a rack) and balance your plate or steamer of food on it. Put the lid on your steamer or wok and check occasionally to see if the water needs topping up (use water which is already hot).To help you on your way to cooking Chinese food at home, I�m going to briefly describe the basic equipment, ingredients and techniques which you need to know so that you can produce some simple and tasty dishes. I hope you enjoy the article and that it inspires you to get cooking!Some common store-cupboard ingredients that you will almost certainly need are dark and light soy sauce, some sort of cooking oil and sesame oil, cornflour and rice wine or sherry. For more information, see my article Chinese Cooking - Ingredients and Equipment.Steaming is widely used in Chinese cookery. You can use a bamboo steamer in a wok, a heat-proof plate placed on a rack in a wok or other large pan or you can use a normal European steamer.IngredientsMeat should be cut according to the recipe but normally in thin strips. Vegetables likewise but in any event should be of similar shapes and sizes to ensure even cooking. Long thin vegetables such as spring onions, carrots or asparagus are often cut on the diagonal so that more surface area is exposed for quicker cooking. Measure out sauce ingredients - check the recipe - if they are all added to the dish at the same time, you can put them all in one small bowl. If cornflour is included, don�t forget to give it a good stir before adding to the other food.Before you rush out and buy up the whole Chinese section at the supermarket, bear in mind that some ingredients don�t keep well if left unused. Just select something simple from your chosen cookery book and buy the things that you need for that then you can expand your selection as you progress through different dishes.Whichever method you use, make sure that the food is above the water level and isn�t getting wet.EquipmentNow add your other ingredients in the order stated in the recipe and toss them over the surface of the wok ensuring that nothing rests in one place for too long and moving the food from the centre of the wok to the sides. I suggest that you wear an apron or other protective clothing for this operation as the food often spits due to the high temperature it is cooked at.The most well known Chinese cooking technique is stir-frying. This is where your wok comes into its own as it�s shape and size (at least 14 inches diameter with deep sides) is ideal for quick cooking. The secret to successful stir-frying is to have all your ingredients ready in advance.You can use your wok for deep frying but be very careful that it is safely balanced on its stand. Under no circumstances leave it unattended. Deep frying in a wok uses less oil than a deep fryer or saucepan but you may find these safer and easier to use.Deep FryingWhen I first ate Chinese food in the UK in the 1970s, it was really quite unappealing. Everything came in a gloopy sauce and seemed to taste the same, due to the overuse of monosodium glutamate, supposedly a flavour enhancer but in reality, nothing of the kind. Then in the 1980s a new breed of Chinese restaurant arrived (at least it took that long to reach the provinces) which provided lighter, tastier Chinese cooking demonstrating regional differences. There was one drawback, however, which was that this new type of restaurant was much more expensive than the original cheap �n tasteless ones. Consequently, I thought how nice it would be to cook Chinese food at home but I had no idea where to start until BBC TV came to my rescue in the shape of Ken Hom, the USA-born chef of Cantonese parents.Shallow FryingAlthough there are many implements and pieces of equipment you can buy, to start on the road to cooking your own Chinese food, you really only need a good knife or two and a wok. Woks come in all shapes and sizes, they can be non-stick, flat-bottomed, they can even be electric these days but I still prefer my old carbon steel wok with it�s rounded bottom and one wooden handle. This is a Pau wok. These are readily available in Chinese supermarkets and are much less expensive than other varieties. There is one important task though, before you will be ready to cook with such a wok and that is to season it. You will need to scrub it with a cream cleaner to remove any residues of machine oil and dry it carefully. Put the wok on the hob over a low heat. Rub the inside of the wok with two tablespoons of cooking oil using kitchen towel. Let the wok heat slowly for 10 to 15 minutes then wipe the inside with more kitchen towel. The paper will come away black. Carry on coating, heating and cleaning off until the kitchen towel comes away clean. Your wok is now ready to use. After use, wash only in water without detergent and dry thoroughly over a low heat. You may also apply a little oil if you wish. This should prevent the wok from rusting but if it does develop rust, just scrub and season again.

As with Western cooking, braising is used for tougher cuts of meat and involves gentle cooking of meat and/or vegetables in flavoured stock. Red-braising is the technique where food is braised in a dark liquid such as soy sauce which gives the food a red/brown colour. This type of braising sauce can be frozen and re-used.




Forces going places


THERE seems to be no stopping the Armed Forces Superannuation Fund or Lembaga Tabung Angkatan Tentera (LTAT). It has grown stronger and has today an asset base of RM60 billion and a string of diversified businesses, including six listed entities. While it may not often be in the limelight like the Employees' Provident Fund (EPF) or Permodalan Nasional Bhd (PNB), it has delivered an impressive dividend of 10.5% per annum on average. Much of its success can be credited to Tan Sri Lodin Wok Kamaruddin, who has been helming LTAT for almost three decades.


With the market run showing no signs of reversing, many stocks, especially the big caps, have rallied over the last two years. Our `Special Report' features potential small cap stocks that investors may want to have on their radar.So where does LTAT go from here? LTAT: Soldiering on


With its consistently strong returns and high dividends, the Armed Forces Superannuation Fund puts other government-linked funds in the shade.


DIVERSIFICATION THE KEYAs required by law, at least 70% of LTAT's total funds are invested in trustee investments. They include investment into fixed deposits, Bursa Malaysia-quoted shares, and land and property. The balance 30% is invested into private companies.Within its stables are also a few business brands that people do not usually associate it with. For example, Boustead has a 45% stake in Kao (M) Sdn Bhd, 25% in Cadbury Confectionery Malaysia Sdn Bhd, 70% in Boustead Sissons Paints Sdn Bhd, and 66% in The University of Nottingham in Malaysia Sdn Bhd.He reiterates that the reason for having such a diversified portfolio is to enable LTAT group to weather any economic condition and to ensure a balance in the flow of income.Lodin asserts that though the contract may only be 30% of what MHS used to get in its heyday, it is nonetheless `still quite attractive'.LTAT's listed flagship Boustead Holdings is a diversified conglomerate. Its other listed entities are financial arm Affin Holdings, Boustead Heavy Industries Corp Bhd, UAC Bhd, the Al- Hadharah Boustead REIT, and its most recent addition, drugmaker Pharmaniaga Bhd.Boustead groups its portfolio under six core divisions - plantations, property development, financial services & investment, manufacturing & trading, heavy industries and pharmaceuticals.`There is potential for MHS to expand not just within Malaysia but also in the region. What is key to the successful operation of this business is the expertise and for it to give the best possible service. As the same time, we can use this to generate employment for retired military personnel. It would fit in nicely with our CSR (corporate social responsibility) role,' Lodin says.Nottingham University Malaysia is the first British university to be set up in Malaysia and the first campus of the university to be set up outside of the United Kingdom. It had hosted many important dignitaries from the UK, including Prince Andrew and the British Minister of Education. The university currently has some 3,700 students, of which 60% hail from 60 countries. `It is something we are proud of,' says Lodin.Lodin hopes Pharmaniaga's operations would improve under Boustead's management but declines to comment on its past. `Whatever it is, under our group we believe in operating our companies in the most transparent way. We make sure they operate on good corporate governance practices. Only in this way can we win the confidence and trust of the public and our customers.'`The bottomline drives me,' says the man who has been helming LTAT for almost three decades and Boustead for almost two. According to Lodin, there is a constant review and assessment on all LTAT investments and it has no qualms `letting go' of unprofitable ones it cannot turn around. `We cannot be sentimental,' he stresses.We again ran a cover story on LTAT and its group managing director Tan Sri Lodin Wok Kamaruddin in our Aug 16, 2002 issue. By this time, the LTAT group was already being seen as an emerging powerhouse in the Malaysian corporate scene.As a group, LTAT seems to have a finger in just about every pie, with interests in plantations, finance, heavy industries, property, hotel management, travel, shipbuilding, helicopter services, pharmaceuticals, education, paint, fast-moving consumer goods (FMCG), and more.Today, the fund boasts a string of diversified businesses, most of them profitable, including six listed entities, and an asset base of nearly RM60 billion. Most importantly, LTAT has through the years delivered consistently good dividends to its contributors, fulfilling its duty admirably as the custodian of the nation's Armed Forces investment fund.Its interest in oil & gas (O&G) is currently parked under `financial services & investment' as its stake in the sector is `still small'. In March, Boustead invested RM100 million for a controlling 51% stake in MHS Aviation Sdn Bhd, strengthening its involvement in the sector. The helicopter and aircraft services company, which serves the O&G industry, was recently awarded a 10- year RM3 billion contract, with the option to extend for another five years, from Petronas Carigali Sdn Bhd.`So far in the last 38 years, LTAT has been able to pay contributors dividend at the rate of 10.5% per year on average. That's an indication of our performance and the benefit of having such a diversified portfolio,' he reasons.Lodin attributes LTAT's strong performance to proper planning and strategising. `We currently have in place a seven-year investment programme for 2007-2013. We're pleased with the returns we're getting from our investments, which in turn enable us to give good returns to our contributors,' he says.THE Armed Forces Superannuation Fund, or better known as Lembaga Tabung Angkatan Tentera (LTAT), was first featured on the cover of Malaysian Business on Nov 16, 1994. LTAT had then just listed its financial arm, Affin Holdings Bhd, and was expanding its flagship company, Boustead Holdings Bhd.Last year, LTAT registered a record pre-tax profit of RM751 million, while at group level, pre-tax profit touched RM1.7 billion.LTAT/Boustead has made good profits from the sales and will continue to identify non-core companies with a view to disposing of them for the right consideration, Lodin says, adding that `we are talking to a few interested parties' for the sale of `half a dozen or so' non-core entities.Of its many associate companies such as Kao and Cadbury, Lodin says: `They are just investments. If someone comes around and wants to take over our stakes, we are prepared to discuss. We've sold our interest in Riche Monde (Sdn Bhd), a very profitable company but not halal. We've sold some of our oil bulking companies. We've even sold our 80%-owned general insurance company BH Insurance (M) Bhd because we also have an interest in Axa-Affin General Insurance Bhd through Affin Holdings and we decided to rationalise.'He does not say which companies they are but it is quite certain The University of Nottingham in Malaysia (in which Boustead owns a 66% stake) is not on the platter.LTAT currently manages a fund size of RM7.6 billion. As it manages only the funds of members of the Armed Forces (see box story on How the LTAT Fund Works), LTAT's fund size does not grow exponentially through contributions like funds such as the EPF. As a case in point, it received a total of RM617 million in contributions last year but paid out RM670 million.HEALING A BRUISED REPUTATIONWithin its stables are also two previously listed companies - Boustead Properties Bhd and Johan Ceramics Bhd - which were taken private on Aug 8, 2008 and April 13, 2007, respectively.LTAT hires quite a number of ex-servicemen in its businesses, mostly in Boustead Heavy Industries Corp, which operates three shipyards in Malaysia.Pharmaceutical became a new core business for Boustead following its acquisition of Pharmaniaga. But the generic drugmaker, though profitable, has a slight reputation issue. A few years back, there were allegations that it was overcharging the government (it has a concession to supply drugs to government hospitals).`I view our participation in Nottingham University partly as a means to add value to the education business in Malaysia. I also view Nottingham University as adding value to our landbank in Semenyih. We own about 1,200 acres in Semenyih and 100 acres is put aside for the university,' he says.LTAT, which was established in August 1972 by an Act of Parliament, has outperformed other government-linked funds such as the Employees Provident Fund (EPF). Over the last 38 years, LTAT paid out dividends at an impressive rate of 10.5% per annum on average. In the last 10 years, the payout ratio averaged over 13% per annum.

Thoroughly enjoying it


Managing the investment portfolios of diverse entities is a task to be relished for Tan Sri Lodin Wok Kamaruddin


I suppose we may want to see whether there are opportunities for us to participate in the economic activities of the region, especially with its opening up under AFTA (Asean Free Trade Area). Through Boustead, we have investments in Indonesia, Singapore, and Myanmar, but they are small.I personally believe Malaysia still offers a lot of opportunities for investment funds like us to invest in the economic development of the country, especially with the Economic Transformation Programme (ETP) to expand the economy and make it grow in line with Vision 2020.A few years back, there were claims that Pharmaniaga was overcharging the government...We are not in a hurry to reduce our stakes; perhaps over two years would be good. At present, both are giving good returns to LTAT. Boustead is giving 7%-8% yield and pays dividend on a quarterly basis, and it has also recently announced a dividend policy of paying out 70% of its net cashflow based on income received from its investments.TAN Sri Lodin Wok Kamaruddin has been at the helm of Lembaga Tabung Angkatan Tentera (LTAT) since 1982, and subsequently also Boustead Holdings Bhd, when the fund took over majority control of the company.Part of the Government Transformation Programme (GTP) is to see more liquidity of government-linked investment companies (GLICs) in the market. Boustead and Affin Holdings are two of the listed entities majority-owned by LTAT.We also believe there are two ways for Pharmaniaga to expand its operations - halal drugs and herb-based supplements. If we can expand on our R&D (research and development) activities to focus more on these two areas, we believe the potential for Pharmaniaga will be tremendous, not only in Malaysia but the region and other Islamic countries as well.For LTAT, negligible. Only one so far, in the Islamic International Infrastructure Fund based in Bahrain. Returns from this fund are very good. As to whether we will invest more overseas, it depends on the viability and opportunity.`Except maybe my cucu (grandchildren),' he adds with a laugh, and genuine affection. Following are excerpts of the interview.Are you currently looking at any other acquisitions? There was talk you were interested in Esso.LTAT will probably pare down its interest in Boustead to 51% or so over some period of time from the current 59%. In the case of Affin, LTAT owns direct and indirect stakes of about 56%. Over a certain period, we can reduce our interest by 4%-5%.Pharmaceutical is not a new business for us. Boustead has two plants - in Sungai Petani and Bandar Iskandar near Lumut, under Idaman Pharma (Sdn Bhd) - manufacturing drugs and penicillin, and has been a supplier to Pharmaniaga for the last five years.Also, we won't be keeping all the companies we have now. We will continue to identify non-core companies with a view to disposing of them for the right consideration. In fact, we're talking to a few interested parties.Later on, maybe. Some of this came about through mergers and acquisitions (M&As). Some of the shareholding structures are quite confusing. Sometimes I get confused too! There will be some rationalisation later on, but we'll have to complete some of the (M&A) exercises first.The newly appointed managing director for Pharmaniaga, Datuk Farshila Emran, was Idaman Pharma's MD. She's very enterprising, hardworking and a no-nonsense lady who knows the business and has lots of networking. Under her management, Idaman Pharma has been giving us good returns.The bottomline is the one that drives me. That is what I monitor very closely. If a company doesn't do well, then there is no reason for it to be in the group. We have constant reviews and assessment of all our investments. We cannot be sentimental. Just because we have had a company for over 20 years is no reason to continue holding on to it.How much of your investments are overseas?We believe Pharmaniaga has tremendous potential to expand not only in Malaysia but also regionally. For a start, it has got a 10- year government contract to supply government hospitals with various types of drugs. We believe it has not fully exhausted its capacity to do business locally. There are still some areas of government business that are not being attended to. There is also room to grow on the private sector side.We're always looking at opportunities to expand in every business sector we are in. BH Petrol is giving us good returns. Our partnership with Vitol has been very positive. If an opportunity comes for us to expand either organically, which will take time, or via acquisition, we will certainly take it. We do want to grow BH Petrol but it is a question of how we approach it.In plantations, for example, we own about 17,000 hectares, half of them planted, in Sumatra. But that is in the process of being sold. For the time being, we want to confine ourselves to Malaysia. When you operate plantations overseas, there are a lot of challenges such as local laws and requirements and labour. We are currently talking to one potential buyer.Pharmaniaga may be a bigger ship (than Idaman Pharma) to manage but the components are the same. Very importantly, she'll be getting a lot of support from the Boustead group of companies. And I'll be watching very closely the activities and performance of PharmaniagaManaging and growing the diverse portfolios of both the Armed Forces' superannuation fund and a corporate conglomerate is certainly no easy task. A lesser man would have buckled under the pressure long ago, but Lodin had remained calm and steadfast as he strives to do his best for `the soldier boys'.We're almost there in Boustead's acquisition of (Indonesian bank) PT Bank Ina Perdana. The only outstanding issue is approvals from the regulators.I cannot comment on that as we were not involved then. Whatever it is, under our group, we believe in operating our companies in the most transparent way. We make sure our companies operate on good corporate governance practices. Only in this way can we win the confidence and trust of the public and our customers.The genial and down-to-earth Lodin frequently expresses gratitude for the good fortune of having capable, dedicated and loyal lieutenants to make his job easier. Being `blessed with good health, good family and good support' gives him the peace of mind, he says. Thus, when asked what keeps him up at night, Lodin, 61, is quick to say: `Nothing.'The presence of Bank of East Asia as a major shareholder also adds value to the banking group in the form of various forms of business relationships, and not only within Malaysia, as we're looking forward to expanding our operations especially in Islamic banking to places like China. We hope to achieve some positive development this year.What are your plans for the recently acquired Pharmaniaga Bhd?There are a lot of companies under LTAT and Boustead and many cross shareholdings. Are there plans to make it all more streamlined?Affin is also a strong group now. Even though it is one of the smallest local banking groups, it has done a lot in the last seven years. It is enjoying a deposit and loan growth of about 16%-17%. Its NPLs (non- performing loans) had come down tremendously to about 1.7%, slightly lower than the industry average.In fact, he admits to thoroughly enjoying it! `If you asked me to go on until I dropped dead, I would do it,' he discloses to Malaysian Business in an interview.You mentioned that LTAT wants to pare down its stake in Boustead Holdings Bhd to increase the liquidity of the stock. Could you elaborate?On property, we're looking at a few plots of prime land within the Klang Valley with a view to participating in their development. One is at Jalan Cochrane, which is owned by the government. LTAT is looking at establishing a similar type of development as Mutiara Damansara (in Selangor) there.

7 Steps for a Perfect Wok


A wok can last a lifetime with the proper care. This includes occasionally seasoning it, as well as properly storing it. Luckily, both are very easy to do and can be done in just a few minutes. Follow this step-by-step guide that will teach you one of the steps of proper wok care - seasoning it.


6. Spread the oil all over the inside of the wok. Make sure to completely cover the interior of the wok with oil. The wok will now be ready to use.2. Place the wok on the stove over a high heat.3. Heat the wok until the bottom of the wok becomes a dark bluish color (about twenty minutes). Rotate the wok on its side and burn similarly until entire wok is dark bluish.Seasoning a Wok5. Fold a paper towel, and soak it with cooking oil (such as peanut or corn oil).It�s important that you do NOT follow these instructions for a wok with a non-stick coating. Following these instructions will damage the non-stick coating.Both seasoning and storing your wok are important in keeping your wok in excellent shape. If you happen to get a little rust on it, don�t worry about it too much. Try to lightly brush it away, but, otherwise, just re-season the wok and continue using it. Other than that, use your wok often to develop a tasty seasoning on it to enhance your flavors.In the beginning, you will need to season the wok very frequently, after every use is best. When the food begins to stick to the surface of the wok, it may be time to re-season your wok. Eventually, a thin layer of oil will begin to permanently set into the wok. After this happens, you will not really have to worry too much about seasoning it again. From time to time the seasonings on the surface of the wok will be depleted, and it will be necessary to re-season the wok.4. Cool down wok until room temperature.

Both seasoning and storing your wok are important in keeping your wok in excellent shape. If you happen to get a little rust on it, don�t worry about it too much. Try to lightly brush it away, but, otherwise, just re-season the wok and continue using it. Other than that, use your wok often to develop a tasty seasoning on it to enhance your flavors.




QUICKFIX FOR DIABETICS: Chinese pepper steak and quick fried rice


You'll be stir-frying thin slices of beef in a savory mixture of green peppers, fresh ginger and garlic to make this tasty dish. Chinese food takes only minutes to cook; it's chopping and cutting that take some time. To speed things up, look for pre-sliced beef and stir-fry vegetables in the supermarket. Or slice vegetables in a food processor.


2. Drain into colander over sink. Add oil to wok and heat to smoking. Add onion and stir-fry 1 minute. Add rice and stir-fry 2-3 minutes.
